Well its a new year, time for some new stuff!! New Year’s dinner for us was always pork and sauerkraut, & I did not disappoint my mom (in heaven, & I miss ya!) this year! Crock pot pork tenderloins in sauerkraut is easy & yummy Just place pork in crock, add as much sauerkraut as you’d like – we LIKE a LOT! Add some caraway seed – a tsp or two, black pepper to taste and a splash of apple cider vinegar – about 1/4 cup. Cook on low for 8 hours. YUM! We like to serve with jacked up baked beans, johnny cake (corn bread) & collard greens!!

The one thing you should remember is to make sure that the vegetables are all cut approximately the same in size and thickness. Then, you need to arrange larger pieces around the outside edge and the smaller pieces on the inside. You should also use a fork or knife to pierce veggies like potatoes that have skins to keep them from cracking open from the pressure building up inside.

With dishes that will require stirring, you should place a smaller bowl inside a larger bowl (both microwave safe, of course) and pour the liquid you are cooking in the larger bowl.
Having this smaller open space will allow the food to basically stir itself, in a way, as it is cooking. Make sure you cover your food as well to avoid spills and splatters from making your microwave a mess.

When it comes time to clean, you can get rid of offending smells by placing a cup of water with a slice of lemon in it on high for two minutes. The citrus will take out any offending smells and help clean your microwave. Or you can throw in your kitchen sponge, washed out with some dishsoap on it for 15 seconds, then wipe down the entire oven! It even gets rid of the nasty smell from the sponge!!

What you need:
 

4 lbs pork spareribs
3 garlic cloves, minced
3/4 c beef broth
1/3 c soy sauce
1/4 c ketchup
1/4 c honey
1 medium onion, sliced
1 t salt
1/2 t black pepper
red pepper flakes or chili paste per taste (optional)

 
What you do:
 

Place ribs in an airtight container and cover with onions.  Combine remaining ingredients in a bowl and mix.  Pour mixture over ribs and place in refrigerator for 4-8 hours, turning ribs in marinade at least one time.  
Place ribs under broiler for 10-15 minutes and broil.  Ribs should be nicely seared, but not blackened or charred.  Add ribs, onion and marinade to the crock-pot.  Cook on low for 8-10 hours.
May add some chili paste or red pepper flakes to marinade for a spicier version.

 
 
Crock pot or slow cooker heating temperatures may widely vary per model.  To ensure proper cooking, make sure you leave the cover on the crock pot.  Removing the cover for even a little bit releases all the heat trapped inside and adds cooking time to your meal.
